Can you add Hp Max and Mp Max to the target stats?

I'm assuming you want a one hit KO attack, which completely drains the target stat. Simply set your target stat to whatever. In damage math set it to 100% of "stat". This should work, unless I'm not understanding your question.
Bob the Hamster: I am guessing that this question is actually a misplaced feature-request, and should be deleted entirely. I am guessing that somebody wants to make an attack that temporarily increases HP max or MP max for the duration of the battle.
